i thought we could get some new recipes from each other. i would like to try something new. i would like something that wouldn't take all day but tastes like it does. i'm excited to learn new recipes from all you moms!! This is one of mine. Hope you like it. Thanks, Stephanie

~ SOUTHWESTERN CHICKEN~

- 4 boneless skinless chicken breasts

- your favorite BBQ sauce

- 1/2 an onion

- 1 package of sharp cheddar cheese

-1/2 can to a can of chicken broth



DIRECTIONS

Preheat oven to 350. Put chicken and the broth in the pan. then spread bbq sauce of your choice on each breast. Place in oven for about 30 min. While cooking dice up 1/2 of an onion. can use red or white. both are good. i usally use white. After the 30 min is up take chicken out of the oven put extra bbq sauce on the chicken then onion and last plenty of sharp cheddar. i usally put a lil pepper on mine but not my daughters. put the chicken back in the oven for 5 mins. so all the flavors melt good. if you have any questions about my recipe just let me know.

"Porcupines"
A favorite for my toddler son. These are fantastic and easy to make. I love the fact they can be finger food/snack or part of a full meal :-)

1 egg
2 (10.75 ounce) cans condensed tomato soup
1/4 cup instant rice
1/4 cup chopped onion
1 tablespoon chopped fresh parsley
1 teaspoon onion salt
1/4 teaspoon ground black pepper
1 pound lean ground beef
1/4 cup Worcestershire sauce
DIRECTIONS
Lightly beat egg with a fork, then add a heaping tablespoon of the soup and mix lightly. Mix in rice, onion, parsley, onion salt and pepper. Stir in the ground beef and mix well with hands. From mixture into 1 1/2 inch round meatballs.
Coat a large skillet over medium heat with cooking spray. Cook meatballs and brown on all sides.
Combine remaining soup with Worcestershire (you can increase or decrease Worcestershire to your liking), stir until smooth, then spoon over meatballs. Cover with lid and simmer for 20 to 30 minutes, stirring every few minutes.

thanks heather. next time i go to the store i'm going to get the stuff to make it. my hubby luvs corn!!!! ur boys are too cute!!!

1 cup sour cream

Directions
Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.
