It really depends on your child's attention span. Playing with stacking or nesting toys can really entertain a one year old as well as shape sorters and help with both their small motor skills and mental development. If they can sit longer you could sit down and read a story with them. You don't necessarily need to read the words, simply identifying what is in each picture with your child can be both fun and educational. You can also play more active games like "Patty Cake" or "Peek-a-boo." I have yet to meet a one year old who doesn't like these games.
