What health changes have you experienced from becoming vegetarian or vegan?
Since incorporating a 90% vegan diet into my lifestyle, I have noticed increased energy, vitality, immunity and I've experienced a mood that is more positive and optimistic. I have clearer skin and have been able to reach my ideal weight after having two kids. I feel so in control of my health and that of my family's that it makes me feel empowered. I crave more healthy foods than I did before and love creating new and exciting recipes that are not only good for you but taste great too.
Do you expect your kids to be vegetarian or vegan?
My children currently follow an "almost" vegan diet. My family follows a 90/10 - sometimes 80/20 - rule, me being the most strict. My goal is to eventually move us to a full vegan lifestyle, but I am making the transition slowly. My children now make healthful food choices and that affirms what I am trying to accomplish is working. As my children get older they will be able to understand what following a vegan lifestyle means and hopefully chose this for themselves.
What's one of your favorite foods you've discovered by being vegetarian or vegan?
Nutritional yeast has become one of my favorite, most versatile additions to my vegan lifestyle. I loved eating cheese and so did my family. Nutritional yeast has allowed me to make some of our favorite "cheesy" foods and not feel like we are missing out on anything. I can make Mac n' Cheese, Creamy Caesar Dressing and Parmesan that makes us all smile at my house. Nutritional yeast is also the only reliable food source of vitamin B12, so if you're vegan, it's a good idea to add some to your food regularly.
