What health changes have you experienced from becoming vegetarian or vegan?
Wow, what a loaded question;) I joke of course, but my answer is dense! What I can say in this small space is that my journey to veganism (through vegetarianism) has opened my mind and body to new sensations and experiences. It has brought my family energy, clarity, happiness. We all feel best when we eat the cleanest and it is definitely a point of pride for me. I have to say that the adventure is even better since we're all doing it together. The fact that brown rice and beans with avocado is my 3 year old daughter's favorite food is pretty fantastic. The fact that we have nothing refined in the house sets an example for our greater family. Knowing my kids are eating such nutrient dense foods from day one gives me a sense of calm that they will be as healthy as they can be.
Do you expect your kids to be vegetarian or vegan?
I'd say expect is a lot...hope is more like it. The way I see it is that in my house they will be (along with anyone else who eats here), and when they're old enough to explore we'll talk to them about why we made these choices, then let them make their own. I'm hoping to instill in them the respect for the land and all the animals upon it so that they won't want to make another decision. The best gift we can give our kiddies is the tools, right?!?
What's one of your favorite foods you've discovered by being vegetarian or vegan?
Seaweed....braised daikon...coconut kefir...smoked tofu...home made miso soup...gomashio brown rice...pumpkin oat chocolate chip cookies...sprouted bread...chia pudding...the list goes on!
