I need a easy recipe for gfcf cookies has to be a yummy one too ;) my son wants cookies for his birthday party and they are just to expensive to buy pre made!

Hi Candy:

I have never tried this receipe for GFCF chocolate chip cookies (which has nut and egg) but the recipe is in the book The Kid-Friendly ADHD & Autism Cookbook by Pamela Compart (M.D.) and Dana Laake it is on page 296. Please see the following recipe:

* 1 cup (225g) ghee, softened

* 2 cups (450 g) Sucanat

* 2 large eggs

* 1/2 teaspoon salt

* 2 tablespoons (28mL) vanilla

* 1 cup (120 g) almond flour

* 1 cup (140 g) garbanzo flour

* 1 teaspoon baking soda

* 2 cups (350g) GFCF semisweet chocolate chips

* 2 cups (190g) ground almonds or walnuts (can substitute with above almond flour)

Place in a rack in the center of the oven. Preheat oven to 375 degrees F (190 degrees celsius or gas mark 5). Line several baking sheets with Silpat sheets or parchment paper. With an electric mixer, beat the ghee with the Sucanat until very fluffy. In a separate small bowl, mix together eggs, salt, and vanilla until well blended. Add to the ghee/sucanat mixture. Stir until well blended. In a separate large bowl, mix together the almond flour, gabanzo bean flour, and baking soda. Add to the ghee/sucanat mixture. Stir well until blended. Stir in chocolate chips and the ground almonds or walnuts. If the dough is too stiff to work, add more ghee. Drop onto the baking sheets, spacing the cookies 2 inches (5 cm) apart.

Bake until the cookies are just slightly coloured on top and rimmed with brown at the edges (8 to 10 minutes). Be sure to rotate the sheets halfway through the baking time (front to back). Be careful: since the recipe does not use regular flour, the cookies can burn more quickly than usual. Watch them closely. Remove the sheets to a rack. Let the cookies cool for a few minutes before transferring them to a rack to finish cooling. Can freeze when completely cool. Place wax paper between layers of cookies before freezing them.
