What's one of your favorite one-pot recipes? (Soup, casseroles, etc.)

Soup is my favorite thing to make and serve. My Lasagna Soup has all of the great flavor of lasagna with a fraction of the effort. If I am really motivated, I add a salad and some garlic bread.

We make Irish Potatoes every year. It seems to be a New Jersey/Pennsylvania thing, but it would not be St. Patrick's Day without them! My kids love to help me roll the candy into balls and roll them in cinnamon.
