What's your favorite vegan or vegetarian friendly product?

I think vegetable broth is the thing I've found I use most when cooking dinners. We do our best to eliminate oil, and I can cook just about anything and make it taste fabulous with a vegetable broth base.

What's the biggest misconception people have about being a vegan or vegetarian?

Simple is best. The plant based vegan and vegetarian diets are quite easy. Fruit and vegetables are the simplest things to eat and the best for your body. Dropping dairy and meat was very easy after I had a few cornerstone recipes under my belt. Now we're just amazed at how effortless it is to stay thin, have low cholesterol and feel better each day. It also helps to have a friend or two to help support your goals when becoming vegan or vegetarian.

What's your best tip for families who want to start living a vegan or vegetarian lifestyle?

The most important thing I've found is to involve the kids, ask for their help and bravery in trying new foods. Let them help choose recipes, sample new foods and tell them why they are better choices for their bodies. You'll be amazed at how much they remember and are willing when you have their buy in.

My children are toddlers so they like tiny sandwiches, pieces of fruit and hummus and guacamole for quick dipping. I recently made these EasyLunchBoxes snack containers for a trip to the pool for the afternoon. Quick bites of protein and fresh fruit are what I choose to keep them happy. I use a lot of mini cookie cutters to make things bite sized.
