One of my favorite things to make ahead and freeze is Chili. I like to freeze it in portions that would feed 2, and portions that would feed 4. This way I can pull out what I need, and serve it over pasta- for Chili Mac, or over a baked potato, over nachos, over rice, on hot dogs or burgers- great with coleslaw and cheese for Carolina Style, or as a simple bowl of chili. We like Happy Family Cacciatore. A crock pot filled with chicken, meatballs, and sausage to be served over rice or pasta, or even served up with rolls with mozzarella cheese- think Meatball or Sausage Subs! I am not going to lie here, I have been in the "we need to get dinner on the go tonight" situation, and have driven through any drive-thru that is closest to where we need to be. Be it McDonald's, Chick-fil-A, or a Taco Bell, we have done it. I do order waters all around, no Happy Meals, and then let the kids choose what they want with some guidance. It doesn't happen often, so I am not going to beat myself up in these situations. Smile.What's a great treat for spring or Easter? (Please include a link!)

One thing I have done through the years with my family as soon as Spring hits and the markets are full of strawberries, I make Strawberry Shortcakes for dinner. You heard me! Dinner. The sun lingers longer on our days, the breezes turn sweet, and the crisp in the air gently turns to warmth. The scone-like cakes bake away in the oven while fresh juicy berries are cleaned and sliced, and fresh cream is whipped up. Everyone will love you for it.What's your favorite salad recipe that's perfect for Spring or Summer?

Strawberry Spinach Salad with Pink Lady Poppy Seed Dressing is one of my favorite springtime salads. The strawberries are so big and juicy right now! Frozen red grapes are a summer favorite here in Big Red Kitchen. Sometimes for fun we "dust" them. Now here is an oldie but a goodie done way back in my first year of blogging. Ours is an adult Western Party that could easily be transformed into a kiddie rodeo minus the ax tossing of course. My favorite decoration was cutting the back pockets out of my boys' very old, torn, ripped up jeans and using them for the flatware and napkins. I got this idea from a western shop in Wyoming. We had steak and taters, salad with cowboy croutons, and some nice peach cobbler for dessert with ice cream. Kids always love a good Western Party. As an aside- if you click on the link to Wyoming Home from my post, you will see the store front and in the upper window that juts out you will see the room where my great, great, great, great Uncle Tom Horn was framed for the murder of a young boy.
