What's the one food you could never live without?

I could never live without apples. Can you tell from the picture?! I simply adore apples in every color and size. I eat an apple a day and sometimes two, if my kids take the first one away from me.

Apples contain quercetin,an antioxidant that boosts the immune system. Apples are rich in fiber which helps keep us cleansed and regular, all things that keep the doctor away. I always buy organic apples as they are one of the top 10 produce items to eat organic on most lists due to their high exposure to pesticides. I rinse every apple well too, even if it is organic.

Apples are my go-to-snack when I am running errands. If I need an afternoon pick-up, I pair sliced apples with almond butter. As much as I love to eat apples raw, I equally love to eat them cooked in homemade applesauce, cobblers and pies. I am a sucker for any fruit I can make into a dessert!

What's a treat your kids love that's actually healthy?

My children love kale which makes me one happy Momma! It's a superfood that just happens to be delicious and bursting with antioxidants, minerals and vitamins. I love to use it for a salad base or make kale chips with my daughter.

Kale is also wonderful in smoothies as it blends well with fruit without making the drink bitter. My children regularly drink green smoothies and don't even realize that they're drinking super-nutritious kale! I've included my Kid Approved Green Smoothie recipe in my Favorite 3 Blog Posts. What's your best tip for feeding a picky eater?

My best tip for feeding picky eaters is to make the food in question exciting and fun by using them in a dish or meal they already like. For example, I never thought my children would love broccoli and red pepper at such a young age--until they tried them on pizza!

We make homemade pizza at home a few times a month and I let my kids help "decorate" with bits and pieces of vegetables. My 4-year old daughter gets very excited to pick out new, fresh ingredients at the store to design her pizza. After trying broccoli and red pepper on her own personal pizza, she is now hooked on them-even when they are not on top of a slice of pizza vegetable pie!
