In my house we are avoiding multiple food allergies, so I'm always looking for creative ways to fix veggies. Follow the link for a recipe for No-Cream Creamed Corn. The "cream" is made with pureed cauliflower. Kids love it! http://www.learningtoeatallergyfree.com/2011/03/no-cream-creamed-corn.html

What food would you most like to banish from school cafeterias?

Colette Martin

Milk was actually the food that caused the most problems for my son at school. I don't think we need to banish it, but I'd love to see non-dairy options for those that are allergic to milk. Specifically, I'd like to see hemp milk and coconut milk as choices!

What's your family's favorite easy crock pot recipe?

Colette Martin

I just love classic beef stew because it's so easy. I rarely make it exactly the same way, but the basics are stew meat, potatoes, carrots, and onions in a vegetable broth base. I throw everything in the pot in the morning, set it on low, and I can enjoy the smells all day! http://www.learningtoeatallergyfree.com/2012/01/classic-beef-stew-in-crockpot.html

What's your family's favorite recipe for weekend breakfasts?

Colette Martin

For weekend or holiday breakfasts, pancakes or waffles is what I make for my family! I start with a gluten-free pancake mix, then I replace the milk with hemp milk, and instead of eggs I use Ener-G egg replacer. This combo works with all of my family's food allergies, and they taste great! http://www.learningtoeatallergyfree.com/2010/12/authentic-foods-pancakes.html

What's your favorite muffin recipe?

Colette Martin

I am always adapting muffin recipes to use allergen-free ingredients (no dairy, wheat, eggs, or butter). One of my favorites is this allergen-free (Gluten-free and vegan) Banana Coconut Muffins. It's a great way to use those bananas that are about to go bad. http://www.learningtoeatallergyfree.com/2011/06/kelapo-coconut-oil-in-banana-coconut.html

What's a great recipe using ground beef?

Colette Martin

One of my favorite ground beef recipes is simple tacos with guacamole, because it's easy to make allergen-free. I use corn tacos. For the filling, I use ground beef and whatever I have... onions, peppers, black beans... with a medium salsa and of course, guacamole! http://www.learningtoeatallergyfree.com/2012/04/taco-night-with-guacamole.html

What's a great spring or summer recipe that uses corn?

Colette Martin

One of my favorite tricks is to make dairy-free "creamed" corn, using smashed cauliflower to make the cream. You can find the easy recipe here: http://www.learningtoeatallergyfree.com/2011/03/no-cream-creamed-corn.html

What's your favorite muffin, scone, or bread recipe? Please share a link to the recipe and a photo if you have one.

Colette Martin

Muffins and quick breads are among my favorite things to make. To say that I have a favorite would be unfair (I like them all!) but this recipe for Avocado Chickpea Quick Bread is especially good. Great for those with food allergies, celiac disease, and vegans. http://www.learningtoeatallergyfree.com/2012/03/avocado-mania-avocado-chickpea-quick.html
