What's the one food you could never live without?

Chocolate! It's a food group in my world.

What's a treat your kids love that's actually healthy?

Banana 'ice cream' and chocolate chip dip (made with chickpeas!)

What's your best tip for feeding a picky eater?

Not everyone agrees, but I fully believe in 'hiding' nutritious things in foods they like. It also helps to make things "fun" to eat (shapes, faces, etc) and letting kids help pick out and prepare foods. Having a garden is a great way to get kids involved and eating healthier too!

What's your favorite easy casserole?

I love casseroles! What's your favorite muffin recipe?

We love muffins at our house! I have several recipes on my blog, and have so many bookmarked that I rarely make the same one twice. However, I have found that muffins are an excellent way to sneak veggies and whole grains into my kids! Asian Noodle Salad is SO good! I love it in the summer time,b/c it's good cold and it only requires boiling water on the stove to cook the noodles. I could eat this several times a week and never get tired of it! Check out the blog link for the recipe and picture!

Can you share an easy, crowd-pleasing birthday party cake or cupcake recipe? (please include a link to a photo!)

One of my favorite cake recipes is this one for an EGG FREE cake for those like my son with egg allergies. I like it b/c unlike many other egg free cakes, it rises well, and does not fall to pieces when you cut it! Great for cupcakes too. Ingredients for egg free chocolate cake - 3 cups all-purpose flour 2 cups white sugar 1 teaspoon salt 2 teaspoons baking soda 1/2 cup unsweetened cocoa powder *I use Hershey's Special Dark 2/3 cup canola oil 2 tablespoons distilled white vinegar 2 teaspoons vanilla extract 2 cups cold coffee (or water) Directions- 1.Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water/coffee over all, and stir well with fork. 2.Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

My girls, ages 10 & 12, love to help out in the kitchen. They are pretty independent now..they can make simple dinners, bake, and follow a recipe as well as I can! I think everyone is in agreement that pizza is a popular kid-friendly meal. My daughter made this Pepperoni Roll all by herself!
