I usually make gluten-free cupcakes for my daughter's birthday because she has Celiac and Type 1 Diabetes. Cupcakes are easier to control carb portions. This past birthday she begged for a cake. I found a local woman who bakes beautiful gluten-free cakes. The theme was cowgirl so the cake was decorated with a pink bandana and a cowgirl boot with my daughter's initials. The lady who baked it used a g-free Betty Crocker cake mix as the base for me so that we could calculate carbs more easily, which can be a huge challenge when baking from scratch! The cake turned out beautiful and was a huge success at the party, especially with the birthday girl! :)
