I believe that cooking meals at home is a vital part of building a healthy family, but so many moms think they don't have the time or the skills. I think cooking doesn't have to be complicated or chaotic to be great, and I'm out to prove it.

Q. What's an easy, healthy lunchbox menu for kids?

A. Whole wheat bagel with sun butter (like peanut butter but made from sunflower seeds) with raisins sprinkled on top, organic string cheese, and pineapple chunks. It covers protein, whole grains, calcium, and fruit with a nice balance of sweet and savory. Plus the bagel adds a little variety from plain bread.

Q. What's your favorite recipe for a dish that can be made ahead and frozen?

A. Mini Meatloaf Muffins are always in my freezer for quick meals. Just mix together 1.5 lbs ground beef, 1/4 cup bread crumbs, 2 minced garlic cloves, 1cup diced onion, 1/2 cup grated carrots, 2 eggs, 1 cup ketchup or spaghetti sauce, 1/2 teaspoon oregano, 1/2 teaspoon basil, and salt and pepper to taste. Divide evenly among a 12 cup muffin tin (sprayed with oil) and bake at 350 for 25-30 minutes. I like to make a double batch and freeze the extras for a super quick meal anytime we need it.

Q. What's your favorite muffin recipe?

A. My family's favorite muffin isn't actually a muffin - it's what we call a "breakfast cookie". It's just like a muffin, but the batter is thick enough that it doesn't need a muffin pan. Just plop a spoonful on a baking sheet and bake. The kids love having cookies for breakfast. And since it's filled with healthy ingredients I love it too.
