Mini Meatloaf Muffins are always in my freezer for quick meals. Just mix together 1.5 lbs ground beef, 1/4 cup bread crumbs, 2 minced garlic cloves, 1cup diced onion, 1/2 cup grated carrots, 2 eggs, 1 cup ketchup or spaghetti sauce, 1/2 teaspoon oregano, 1/2 teaspoon basil, and salt and pepper to taste. Divide evenly among a 12 cup muffin tin (sprayed with oil) and bake at 350 for 25-30 minutes. I like to make a double batch and freeze the extras for a super quick meal anytime we need it.
