What's one of the first recipes you taught your kids to make?
The first recipe they learned was spaghetti, a weekly request in our house. They had to wear oven mitts which protected them up to the elbows, and waited patiently for me to hand them each ingredient in turn. We have an electric stove so there were no open flames, but we were very careful around the very hot pot and pan. They did fantastic! Not only was it cooked to perfection but they appreciated (and ate) their dinner and felt quite proud of themselves for making it.
What's a delicious no cook recipe?
We love smoothies. They are so versatile and easy you really don't even need a recipe. Its a great way to sneak in some leafy greens. My favorite came from Green Smoothie Challenge (http://simplegreensmoothies.com/30-day-challenge)
Strawberry, Banana, Blueberry
2 cups spinach, fresh
3/4 cup water
3/4 cup orange juice, fresh squeezed
1 cup strawberries
1 cup blueberries
Blend spinach, orange juice and water until smooth. Next add the remaining fruits and blend again.
* Use at least one frozen fruit to make the green smoothie cold.
My kids absolutely loved it and we had smoothies for after school snacks a lot this year.
What's a great breakfast for a special occasion?
My favorite breakfast recipe is quiche. Again I love the versatility of it, any combination of meats, veggies, and cheeses you like. Gluten-free? No problem make it crustless by layering feta cheese in the bottom of the dish before the eggs and veggies. There are just so many ways to create it you can tailor it to any food likes or aversions. My favorite is Feta, spinach, bacon and tomato. For the school year busy mornings I make individual quiches using muffin pans, they are perfect for breakfast on the go.
