The Most Rewarding Part About Being a Single Parent
That's a tough question. I never wanted to be a single parent, but I've taken the hand I was dealt and made the best of it. Being a single dad to a now-teenage girl is really tough and I think being able to go to bed at night knowing I made it through the day without getting locked up in the loony bin is reward enough.
A Piece of Advice for Other Single Parents
You don't have to do this alone. There are lots of single parents out there who are willing to throw down advice and share war stories. If there is a single parent blogger who you particularly identify with, don't be afraid to ask for advice and opinions. No matter what situation you're in, you are definitely not the first person who has ever gone through it. Don't be afraid to ask for help.

What's your family's favorite recipe for chicken or tofu?
I'm more or less a torta addict. OK, more. A torta is a Mexican sandwich and is completely the bomb. I take chicken breast (though leg meat or thighs work too) and marinate it in a Mojo marinade. My favorite is made by Goya and can be picked up for a couple bucks at most grocery stores. Its best if the chicken marinates for a day but if not, that's OK. I then grill the chicken and put it on the telera roll (Kaiser or any kind of bun/roll works too) with my homemade mango salsa (mango, jalapeno, cilantro, onion, tomato. lime juice), cilantro and homemade guacamole (avocado, onion, jalapeno, cilantro, tomato, lime juice, cumin, cayenne and sea salt). Traditionally it has refried beans and cheese although I leave those off to save a few calories.
