I like to cut up my veggies ahead of time, (usually on Sundays while I'm listening to "The Splendid Table" on NPR). Then I store them in glass containers in the fridge which look pretty and are enjoyable to use, instead of plastic bags which can get kind of sticky. This espcially helps with things like green onions which can be tossed on a wide variety of meals, and baby carrots, which I buy pre-cut, have become a great filler snack.

What's your favorite salad recipe that's perfect for Spring or Summer?

The veggie burger salad is about all I eat for lunch all year, but especially in the summer months. You can use whatever greens you want but I like using a mix that is at least 50% spinach, then I cut the greens up into bite size pieces, top with chopped onions, tomatoes, and pickles. The dressing I use is Karam's Garlic Sauce which I put on the salad, then add the veggie burger and cut it all up to enjoy. For my husband's, instead of the garlic sauce I add shredded cheddar cheese, then place the warm veggie burger on top of the cheese to melt it a little, then put a bit of ketchup and mustard on the burger. When I cut through the burger to make the pieces fork-worthy-size, the 'dressing' gets mixed down into the veggies below. We both love our separate versions.
