What's the one food you could never live without?

I could never live without carrots. I ate them so much when I was pregnant with my second child that she had an orange tint on her skin when she was born from all the carotene in my system! I still eat them everyday for lunch with hummus. I bake them, roast them, boil them, but eating them raw is my favorite. I just simply can't get enough of them. I'm surprised I don't have an orange tint myself!

What's a treat your kids love that's actually healthy?

Orange Vanilla Frozen Yogurt Mini Pops made with nonfat Greek plain yogurt, orange juice and a tiny bit of liquid stevia then frozen into little pops! My kids eat these up like they were candy!

What's your best tip for feeding a picky eater?

Giving a picky eater choices works well in our family. With a family of 5, a picky hubby, and 3 picky kids I have learned to make recipes that allow for options and personal taste. When I made my original baked oatmeal with blueberries in a 9 by 13 dish there was always complaints from someone. I created my Personal Sized Baked Oatmeal with Individual Toppings for this very reason. Each person could decide how they wanted their oatmeal with what toppings they liked, but ultimately ALL were going to eat oatmeal because that was what was for breakfast! I continue to allow individual options which makes the whole family happy! My Individual Whole Wheat Puff Pancake is another winner with my family with different fruit in each!
