I love to grill chicken. Last summer I made a strawberry pineapple chicken. I took chicken breast, chopped strawberries and pineapple, wrapped it in foil (which I lightly covered with olive oil, and let it cook on the grill. The juices from the fruit seeped into the chicken and it was so tasty! I've also done it with mango as well. Served over baby spinach & a tangy vinaigrette to create an opposites attract explosion of flavor! You can add additional items to your salad of course!
