What's your favorite vegan or vegetarian friendly product?
There are so many amazing plant-based products out on the market now which makes it so much easier to go vegan. Some of my faves are Earth Balance butter, So Delicious ice cream, Beyond Meat faux meats (great for non-vegs!) and Amy's Vegan Mac'N Cheese. But there are so many more!
What's the biggest misconception people have about being a vegan or vegetarian?
Most of the people I encounter ask "well then what do you eat?" when they learn my kids and I are vegan. I tell them once I went vegetarian, then vegan, a whole new world of foods opened up! The variety of sources you can find your protein, calcium and all the other vitamins and nutrients our bodies need is plentiful.
What's your best tip for families who want to start living a vegan or vegetarian lifestyle?
Take baby steps and do your research! Ease yourself into it by going vegan or vegetarian every other day to start, then work your way up. Also, by making a meal plan and stocking your pantry and 'fridge full of healthy vegan/vegetarian foods you'll be less likely to "fall off the veg wagon". Find websites, books and resource groups to help you stay on track and inspire you!

One can never have enough muffins stocked in the freezer, ready to take to a friend's house, bring along on a car trip or pack in those kids' lunch boxes. I seem to have a love of all things mini when it comes to food so these mini muffins are easy to just pop right into your mouth!

Since my family is vegan, I've created two delicious chocolate and vanilla cupcake recipes that we always share with non-vegans who never seem to know the difference! I use all natural food coloring which creates the most beautiful colors and came up with a yummy creamy frosting to go with it! The cupcake recipes can also be made into regular cakes which we've done before too.
