What's the one food you could never live without?

For me, personally? Good cheeses. We always have several in the fridge, and sometimes I miss the days where my kids didn't know what kinds of good cheese Mommy was hiding. I joke to my husband that the one thing we need to take from the European menu is the addition of a cheese course.

For cooking, I can't live without eggs. I use them in everything--baking, quiches, lunch foods, boiled eggs, as a binder in a ton of other recipes. I'm at the point where chickens might be a cost effective investment, except I don't want to raise chickens.

What's a treat your kids love that's actually healthy?

My kids love homemade popsicles, nearly any combination of pure whole fruits and/or yogurt. A special favorite at our house is "Patriot Pops" made with pureed strawberries, vanilla yogurt and pureed blueberries. We entered them in a healthy after-school recipe contest at our PX (Army store) last summer and won first place Army/Air Force-wide!!!

What's your best tip for feeding a picky eater?

Get them involved in cooking! A big rule at our house is trying what you make and I'm convinced that helping make a recipe gets them more interested in trying it. It's also great that they can see exactly what goes into something to realize that they might like the same ingredient in different recipes. My daughter is 9 now and has turned into quite the little cook and foodie.

What's your kids' favorite homemade popsicle or frozen treat?

My kids loved the patriotic popsicles we made--fresh strawberries, blueberries, and vanilla yogurt. The best part of homemade fruit popsicles? You get to be the fun mom who lets them have a popsicle for breakfast!
