I love to make and freeze all the usual suspects: lasagna, enchiladas, chili, etc. I double my recipes so I have one to enjoy right away and another to tuck away in my freezer for those busy "I don't feel like cooking" nights (and yes, those do happen)! I also love to freeze soups and sauces; there's nothing quite like heating up some basil pesto or roasted tomato soup and tasting summertime in the middle of a cold winter! Meatballs are another favorite for those busy weeknights since they're easy to add to jarred pasta sauce to make something special. But my favorite thing to freeze is the beef (or turkey) mixture for my Szechuan Beef Pasta. That way all I have to do is make some quick noodles and a salad and dinner is ready! And if I need even more inspiration, I'll take a tour of the freezer section at my local grocery store - if it works for them, chances are it will work for my homemade versions, too!

What is your favorite quick breakfast recipe?

I love breakfast and have tons of great breakfast and brunch recipes, but for a QUICK breakfast, I go to my 3-minute Breakfast Hash. Weekday mornings are so rushed but I can see a difference in my girls afternoon energy levels if I don't send them off with a good breakfast. They're so used to this easy breakfast that they now make it themselves! I keep a container of hash browns in the fridge so they can just scoop some out!

What's a great treat for spring or Easter? (Please include a link!)

Since we're talking "treat" and not "snack" (big difference at our house!), I would have to say Easter Cupcakes! We love to mix up a quick batch and let the kids go wild decorating. It's like a craft they get to eat! I keep cake mixes on hand, substituting the oil it calls for with the same amount of melted butter - it makes a big difference in the flavor. We actually made Easter cupcakes earlier today with some pretty pink baking cups, flower basket cupcake wrap-arounds, peeps, candies & sprinkles.
