We love bento box lunches for my preschool daughter. Favorite fillings include: peanut butter or hummus with "dippers" (apples, carrots, celery, bell pepper, crackers, etc), boiled egg, fruit, cherry tomatoes, snap peas or any other favorite fruit and veggies. Hummus wraps are also a favorite. Spread hummus on a tortilla or lavash bread, fill with lettuce, tomato, and avocado, and roll up. Perfect for little hands and delicious room temp. The slow cooker! Most any soup or stew can be made in the slow cooker. Place all ingredients inside in the morning and it will cook itself and be ready when you are. A few non-recipe recipes for the slow cooker: Chicken Taco Meat Place chicken breasts in slow cooker and cover with salsa. Cook on low for 4-6 hours and shred meat. Use with tortillas, lettuce, tomato, guacamole, and onions. BBQ Ribs Place 1 slab baby back ribs in crock pot. Cover with BBQ sauce, 1 quartered onion, and 1 beer. Cook on low 4-6 hours. Delicious! Chili: Place beans, chopped veggies, onion, vegetable stock and chili powder in crock pot. Sere with cornbread. What's your favorite recipe for a dish that can be made ahead and frozen?

I love making double portions and freezing half for later. Most casseroles can be frozen, including lasagna and enchiladas. Soup is another favorite freezer-friendly dish.
