How do we balance our diets?

My husband has recently decided that he wants to lose about 25 pounds and is starting to count his calories. I have just recently learned I am pregnant again, and I am slightly underweight so could stand to gain a few pounds in addition to the normal pregnancy weight gain. And then our son is 16 months and growing like a weed so needs lots of good nutrition to support him.

What happens sometimes when I eat more than my husband is that he starts to eat more too, or I feel guilty for eating more and feel like I shouldn't.

Any ideas for some good nutritious meals that can help my husband stick to his diet but still be satisfying for me?

HI Julie! I'm a wellness coach and I agree that step one is to stop doing the guilt thing. Honor the amazing creation that is you! Three years ago,I was in your boat-my husband was overweight and I was underweight and suffered from hormone imbalance and migraines-good nutrition made all the difference for us! For both weight gain and weight loss, lean protein is key and for optimum health we make sure half our protein intake is from soy. Don't feel guilty for eating more. You need it. Your husband needs to listen to his own body. Suggest that after he finishes his plate to wait 20-30 minutes. If he is still hungry, go back for a lighter veggie dish to help fill him up. Also, if he drinks a bottle of water an hour before dinner, he will feel more full. Eating a big salad first can also have the same effect.



Some easy things to add better nutrition: Switch to brown rice and whole wheat or whole grain breads and pastas. Replace sodas with water or juice or milk. Eat fruit as a snack instead of popcorn or chips or candy. Put veggies in a food processor and mix them into any dish. That works well with spaghetti, chili, meatloaf, and soups. A book I use often is "Deceptively Delicious" by Jessica Seinfeld. She teaches how to puree fruits and veggies and provides kid friendly (and husband friendly) recipes using the purees.



Some of my favorite recipes (not from the book):



Cauliflower Soup

-1 bag of frozen cauliflower or a head of fresh cauliflower

-1 cup of milk

-1 package of white gravy mix

-shredded cheese (optional)

-salt and pepper



Put cauliflower in a pot and cover with water. Bring to a boil. Turn down to a simmer. Mix milk and gravy mix together and stir into cauliflower. Add cheese and salt and pepper. You can let it simmer until it is at a consitency you like. I like little chucks of cauliflower but you can let it simmer longer if you want it smoother. Serve over baked chicken or porkchops.





Shrimp and veggie stir fry



-1 lb shrimp (peeled and deviened)

-your favorite fresh veggies, I like to use bell peppers, onion, water chestnuts, squash and zucchini. Or you can mix a bag of frozen stir fry veggies with a few of your favorite fresh veggies.

-4 cups of cooked brown rice

-crab or shrimp boil

-soy sauce

-salt and pepper



In a skillet sautee veggies in a small amount of olive oil. Bring a pot of water with 1tbsp of crab oil to a boil. Add shrimp and bring to boil again until shrimp are pink. Turn off heat and let shrimp soak for 10 minutes. Drain shrimp and add to veggies. Add cooked rice and soy sauce and seasoning. Yummy!
