Since I was able to quit my job and come home, I've been really trying out new recipes and stuff. I've found I LOVE to cook, but not so much of a baker of sweet stuff, lol. Well, thought I would share some recipes with everyone, if you have any to share, I'd love to try them. :)


Creamsicle Pie

1 (1/2 gallon) vanilla yogurt ice cream, softened
1 can frozen OJ concentrate, thawed
2 (9-inch) shortbread pie crusts

In large mixing bowl, mix together yogurt and OJ until mixed thoroughly. Pour 1/2 mixture into each pie crust. Cover and refrigerate for 3 hours or overnight.


Ravioli Casserole

1pkg. refrigerated cheese ravioli
4oz. sun dried tomatoes, oil packed, chopped
4oz. shredded cheese
1/4c. grated parmesan cheese
4 eggs
1c. milk

Preheat oven to 350*F. Grease baking dish and add the following in a few layers: ravioli, sun dried tomatoes, and cheese. In a bowl mix together eggs and milk, pour over the ravioli layers. Bake for 30 minutes or until cooked through.


Italian Green Beans

1pkg. frozen green beans, thawed
1 can diced tomatoes (any flavor)
mozzarella cheese
Italian Dressing

In a skillet cook the green beans until tender in italian dressing. Add the tomatoes, cook until heated. Serve with melted mozzarella cheese on top.


Mixed Veggie Casserole

Ritz Crackers
1 Tbsp. butter, melted
Miracle Whip
1 pkg. Frozen Mixed Veggies, thawed, drained
Chopped Onion

Preheat over to 350*F. Grease a baking dish. Place ritz crackers in a ziploc bag and crush with a rolling pin. Melt butter and add to the crackers in the bag, mix until all crumbs are coated, set aside. Mix miracle whip, onion and veggies together and place in baking dish. Pour cracker crumbs on top. Bake for 30-35 minutes or until bubbly and heated through.

Oh, that Creamsicle pie does sound delicious (I love dreamsicles). I had to chuckle because you're the opposite of me. I could spend days and days baking (LOVE it when the holidays roll around...all those pies and cakes and cookies to bake), but don't care for cooking so much.

Here's an easy crock-pot recipe that my little guys love. It sounds odd because of the apricot preserves, but it's actually really good and they always ask for seconds.

6 boneless, skinless chicken breasts, lightly cooked (exterior) and cut into chunks.
2 jars of apricot preserves
1 bottle of bbq sauce (we use the honey flavored)
1/2 package of onion soup mix.

Cook on low for minimum of 8 hours. check to make sure it doesn't cook down and if necessary, add water.

You can cook rice or noodles to serve it over, or serve as is.

Rebekah your Creamsicle Pie sounds really good. I am going to try this next fall when we start our Wednesday Evening meals before our Wednesday evening Church activities.
