Okay - this one was soooo much fun!! Me & my girls..ages 10 & 8, put this together before they went to bed on Saturday night ( We had fun, because we really love cooking together...) Anyway.. picture this..Saturday night, you spend like, 15 min or so putting b'fast in the crockpot, it cooks all night, when you wake up on Sunday morning, the house smells like b'fast & coffee, (because you also made the coffee & set the timer, because you are so very clever!!)..HOW WONDERFUL IS THAT?!
It cooks for 8 hrs on low.... we wanted to eat around 8... so the girls & I made it, then I put it in the fridge until I was ready for bed (after SNL, because I'm a party animal like that!)....
--30 oz package of plain frozen hash brown (shredded) potatoes
--4 already-been cooked sausage, or leftover diced ham
--1/2 onion, diced
--1 green bell pepper, diced
--1 1/2 cups shredded cheese
--12 eggs
--1 cup skim or fat free milk
--1 tsp kosher salt
--1 tsp black pepper
The Directions.
I used a 6 quart Smart-Pot for this recipe, it was ready in 8hrs on low for me.
Spray the inside of your crockpot with cooking spray. Dump in the whole package of hash browns. Spread them out with your fingers, and break up any clumps. This is where I mixed my meat in....we chose diced ham....but you can choose, whatever your family likes...
In a mixing bowl, mix the dozen eggs with the milk, salt and pepper, cheese, and diced vegetables. Pour everything on top of the hash browns.
Cover and cook on low for 6-8 hours, or on high for 3-4. This is done when the eggs are fully cooked and the edges start to brown a bit. If you want the cheese to brown and get a bit crispy on the sides, cook it longer. If there is liquid on the top, take the lid off & continue cooking for about 30 min or until the liquid has "vanished"
OUR Results:
Me & the girls really like eggs, we were happy with the egginess of this dish..Scotty (my Hubby) was not.... It turned out really really realy good though... So....what will I change???

More meat (the diced ham was apparently half water..it shrunk up & was tiny....)
add green chilies (because I really really love them)
will try it with only 6-8 eggs to cut down on the egginess for the man
more salt..
Will definitely make it again & play w/ the ingredients.....and once again...I cannot stress how nice it was to have breakfast made when I woke up.... It was like giving myself I really big gift. !!!!
