all of this discussion has me wondering what you all eat. what types of meals do you prepare for your families-recipes and all if it's a fav of yours. it seems impossible to me to be vegan, lol. plus, i'd like some new ideas for veggies. i'm tired of steamed broccali on the side. :)

This is a hot dish



3 stalks celery

2-3 jalepenos (deseeded and devained)

1/2 to full green pepper(deseeded devained)

2-3 roma tomatoes (deseed)

1/2 yellow small onion

1 clove garlic

1/4 can of tomatoe sauce

salt and pepper

slices of muenster chees



cut all veggies 1/4 inch wide but long...leave onions long..not minced..mince garlic



Put some oil (I like first cold pressed olive oil) bottom of skillet...let get hot....



add all veggies...wait to add tomatoes...add them about 2-3 minutes into cooking.



Once onions go clear (other veggies will still be firm except tomatoes may totally dissolve that is fine) add your 1/4 can of tomatoe sauce to about 1/2 to 3-4 cup of water and add it to mixture...add salt and pepper...sorry but use a fair amount of salt...don't over due it...you will be able to tell



Let simmer for a little while....once it is cooked to your liking, turn off and cover with muenster cheese....do NOT mix cheese in. Let sit until cheese melts.

Serve with warm tortillas, and some nice rice...fantastic

I would love to give you some recipes....here is one...simple crock pot idea...it involves canned stuff..but still yummy

1 can garbanzo beans drained and rinsed
1 can red kidney beans drained and rinsed
1 can petite cut tomatoes ( I prefer sodium free) 15 oz
1 can jalepeno (or mild chile) tomatoes 15oz
1 small can tomatoe sauce
oregeno, parsley, garlic (you can do fresh or shaky type)

cook on low for 4 hours or 5, cooks some elbow pasta seperate (not all the way...still a little bit undercooked) add to mixture..wait 5 minutes serve with cheese on top

I also like to add morning star crumbles...less than 1/2 bag...I do this about 1/2 hour before done cooking. I know some of you don't like processed soy like this...but I do...I do ALOT of fantastic dishes with it.
