Does anybody have any suggestions on making a "healthier" birthday cake? My daughter's 1st birthday is coming up, and I don't want to suddenly load her up on sugar - she's never really had any, and it seems like it would be quite a shock to the system!

Make a banana cake, carrot cake with butter icing or pureed fruit on top

we had substitued the oil/eggs for applesauce.. the joy of vegan cooking has some great recipies, as for icing-.. we did a cut-out #1 with construction paper then filled it in with fresh fruit.. also namaste has a great spice cake mix, we indulge every once in awhile..

I couldn't believe I did either. It seems like it was only two months ago that I can home and cuddled up my 6 lb newwborn from the hospital and took a nap on the couch between her feedings!

I'm glad you found something that you think will work for you!

I'm not sure if I'm a kitchen goddess, but I must have I do come up with some clever ideas. I LOVE to cook and bake foods of all ethnicities and a few years ago my dad was diagnosed diabetic and I had weightloss surgery, so I've had fun transforming all the foods/desserts I used to make into healthier versions!

I LOVE that idea, with the sugar free cool whip and the SF jello! that is so clever - if you came up with that, you're a kitchen goddess!

I found a recipe for basically a lemon+almond torte using fructose on that website, and I'm going to test it out - looking at the recipe now, it doesn't have a frosting recipe to go with it, so now I've got a game plan :) thanks so much!

bday is in 1 week, I can't believe I almost have a 1year old! :)

You're welcome! I've never heard of Deceptively Delicious! Lol. But, I've found the hidden purees add so must moisture and don't change flavor! Good luck! Also, if you want a nice thick frosting with less sugar, buy a tub of sugar free cool whip and flavor it with any dry package of sugar free jello pudding. It thickens up the cool whip for a great consistancy.

Jennifer: Strawberry Shortcake was my first idea, but I think strawberries are out of season??? not sure :)

Megan: I've got "Deceptively Delicious" and I love it - all about the hidden purees - I've never heard of "Cook yourself thin", I'll definitely check it out, thanks!

go to google and type in Cook Yourself Thin Cakes. Cook Yourself Thin is a wonderful TV I love to watch, but most of their deserts get moisture and vitamins from using finely grated vegetables! Chocolate cakes, muffins, all kinds of possibilities. They use no oils because the veggeis have natural oils and less sugar is used than in most recipes. The flavor isn;t compromised at all.

You have to be open minded - some of the suprise veggie substituations may gross you out to hear and read, but trust me you don't taste them at all!
