We LOVE to bake in our house so I'm always on the look out for healthy recipes. I've been fiddling with this muffin recipe for a while and I've finally got it to a point I'm happy with. I thought I'd share it and see if anyone has anything new to share as well.

6 bananas, very ripe
1/4 cup brown sugar
1/2 cup unsweetened applesauce
2 teaspoons vanilla extract
2 eggs
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
1 1/2 cups whole wheat flour
1/2 cup rolled oats
1 teaspoon cinnamon
1/4 cup wheat germ (I use a multi-grain mix I got at the farmers market this summer, flax would also work)
2 small apples diced
1 cup grated carrot
1 cup raisins

Directions

1. Preheat oven to 350 degrees.
2. Prepare a 18 cup muffin pan
3. Mash bananas in a large mixing bowl. Stir in sugar
4. Add applesauce and eggs and beat well.
5. Add remaining dry ingredients and mix well.
6. Fold in fruit and carrots
7. Pour into prepared muffin pan.
8. Bake for approximately 30 minutes, or until a toothpick comes out clean.


These come out super moist and sweet, even with the small amount of sugar in them, in fact you could probably skip the sugar all together if you like. And they are so healthy I don't care if my kid eat 3 or 4 at once

This is another favorite of mine. Slightly less healthy, so I make it much less often, but OH MAN is it good!!! Don't let the strange ingredients scare you off, this is a super rich moist tasting cake that you'd want to serve to company. I like this one for first birthday parties. Drizzle with a chocolate glaze for an even more decadent treat

Chocolate, Zucchini, Sweet Potato, Cake

Ingredients

1/4 cup cocoa
2 1/2 cups flour
1/2 cup rye flour or buckwheat flour (I just use regular whole wheat)
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
3 eggs
1 cup apple sauce
1 mashed banana
1 cup brown sugar
1/2 cup honey
2 teaspoons vanilla
1/2 cup buttermilk ( I use 1/2 cup skim milk and 1 tbsp cream of tartar)
1 cup grated zucchini
1 cup grated sweet potato
1 cup dried cherries, hydrated in
3 tablespoons rum or hot water
1 cup pecans, roughly chopped (optional)
1/2 cup chocolate chips (optional)

(I never use the nuts and always use the chocolate chips)

Directions

1 Preheat oven to 350 degrees.
2 Butter and flour a bundt pan.
3 Sift together first 7 ingredients.
4 Set aside.
5 In a mixer mix applesauce, mashed banana, sugar, honey add eggs and vanilla.
6 Mix dry ingredients into egg mixture then add buttermilk.
7 Stir in remaining ingredients.
8 Pour into pan and bake for 50-60 minutes till toothpick comes out clean.
9 Let cool.
