cynthia we have the same last name... :D maybe we`re distantly related! i use stainless steel because if non stick reaches a certain temperature it can start to give off toxins in your food. their very controversial and i just choose not to use them.

I've started building my collection of forever cookware with my first All-Clad pan. This brand of cookware will last your whole life, but they're quite expensive so I'm building mine up piece by piece. I've got the 10 in skillet right now which works for EVERYTHING! It's the best at searing steaks or meat, makes great pasta dishes, and great for sauces or reductions. I cannot recommend this brand more!

I would try and stay away friom the non-stick because of the chemicals. Stainless steel are nice especiialy the heavy sturdy ones. I have to say my absolute favorite are the LeCruiset. They definitely are pricey but I love them.

I have a really good set of non stick! They are just what I need and after 3 years of some heavy abuse they are still has perfect has the day I took them out of the box! I think it kind of depends on what sort of foods you cook and how you want to use them. If you figure that out it will be easier to choose!

We have sworn off non-stick for about 5 years now and I'd never go back. We have a complete set of stainless steel pots and pans and a set of cast iron as well. I love both choices (cast iron is my personal favorite for pans and I use my stainless pots). Even eggs cook no problem in cast iron when they are properly seasoned. And with a good set of cast iron or stainless you'll probably never have to replace them like you do with non stick.
