I love ready-to-eat snacks that are easy. Have you tried yogurt? My family loves YoCrunch because it's healthy, but they have kinds that kids love, like strawberry flavored with M&Ms or Vanilla YoCrunch with Butterfinger pieces in them. My kids are 4 and 1 and they pretty much eat the same things, I just cut my 1 year olds smaller and we've never had any problems.

Cheese and crackers
fresh fruit/veggies
pita bread and cream cheese

smoothies
hard boiled eggs
I just started a conversation like this in another community and these were some of the ideas I got from people. They're pretty basic, but I know my kids never really turn them down.
