I have learned it is a lot easier to buy the frozen squash from the grocery store and make that into baby food. It is so hard to cut open a winter squash and bake it, then put it in the food processor. Just a little tip. I definitely like to use frozen vegetables and fruits because they store good and you can make up the baby food whenever you like.

something that I do that makes cutting the squash a lot easier is I put the whole squash in the microwave for 2-3 min and it makes a world of difference for cutting. I then cut it up and steam it.

All this talk about squash is funny...I just made a acorn squash today! Though it is time consuming I devote 1 weekend a month (so the hubby is home and I don't get interrupted as much) to making food. I make multiple different fruits and veggies seperately, and can then combine into a variety of different combinations, I use all fresh and bake nearly everything. I then process, freeze into ice cube trays, and transfer the cubes to ziploc bags. My hubby says I am nuts, but it saves us a ton of money and as my son gets older I make the food just a bit chunkier to prepare for finger foods. I know how much he gets because I have measured each cube out to tablespoons and compared to the quantity of the babyfood jars.

I use butternut squash, it is easy to make fresh and not as hard to cut threw than acorn. Just wash shell, cut the ends off and slice in half, scope out the seeds then sit it in a inch of water in a baking pan and bake at 400F for bout 45 mins.  scope out the "meat" and blend or mash, that easy:)

I too use fresh produce when available. I have found that my microwave is my bestfriend when making food, even the sweet potato. I will usually just cut the winter squash in half, place  in some water, cover with film wrap, microwave for about 10 minutes (fork tender) and let sit for another 5 minutes.

I do large batches of squash so I can freeze it in trays, so I always use fresh squash. I have found organic squash at Publix in FL, Whole Foods in MD and PA, and believe it or not, Walmart, in DE.



For preparing squash, I have found steaming (or even boiling with just enough water to cover) to be a much faster method for cooking squash than baking. Since the firmer squashes require some water to be added anyway for pureeing, I just use the cooking water. That way the vitamins and nutrients are retained.



Come to think of it, I steam just about everything. The only thing I bake is sweet potato...



Anyway, as for previously frozen veggies, I agree that peas are great. They are just so convenient!

I have been able to find organic squash at Fresh Market and Trader Joes, just not frozen. I love using frozen peas though!

I've never seen organic squash either...hmmm I wonder if  Whole Food's or Mother's Market sells it?  Do you have either of those stores where you live?  I live in CA

Sadly no Publix. I am down south. I know Trader Joe's doesn't carry it, but maybe I'll check Fresh Market next time I'm there.

I haven't seen organic...if you have a publix by you..that is the only place I have seen it by me.  I have also only seen butternut squash.

The winter squases ARE hard to deal with, aren't they? Have you seen organic frozen sqash anywhere? I can't seem to find it...and have trouble finding frozen squash in the first place around here.

I found this step by step on the internet http://annieseats.wordpress.com/2008/11/... ...it looks pretty easy....maybe it's just time consuming?? I haven't tried it yet...I never made my own food with my son..and my daughter is only a month old. Maybe I'l have to take your word and go the easy route. =)
