Just wanted to share this because I've been slowly adding "bigger" flavors to my son's food and he seems to really LOVE this one! (He's 10 months, this recipe would probably not be good for too young of a baby because it's a little strong...)



I use my Beaba Babycook machine to make it all, but you could just steam it and blend it however you like.



2 green onions, chopped

2 blue potatoes, not peeled, cleaned and chopped

2 or 3 large carrots, peeled and chopped

1 teaspoon olive oil

1 teaspoon fresh chopped herbs (I used parsley and oregano...you could use whatever)



Put first 3 ingredients in Babycook machine or steamer and steam until done but not too mushy. Add olive oil and herbs and puree until just a little bit chunky. (In my Babycook machine I added back a little of the steaming liquid before pureeing since the potatoes can suck up a lot of moisture. This makes the puree a little more creamy and not so starchy and grainy.)



I save out 2 meals worth for the fridge and freeze the rest (about another 2 meals worth...). My son seems to REALLY love the new flavors of the green onions and fresh herbs. I tasted it and tho I'd like a little salt in there if it were me, it does taste quite good. :)



Oh, and if you can't find blue potatoes you can use regular red potatoes or even yukon gold. The blue potatoes have a slightly more interesting flavor (I think) and add great color, but they aren't that necessary.

I get mine from an organic produce delivery we receive, but you might be able to find them at your local farmer's market. They seem to be a specialty produce that small farmers experiment with. A regular waxy-type potato like a baby red or Yukon gold would be the same in this recipe. But the blue potatoes are so fun! They really don't taste any different or have any different nutritional value, but now that my son is older (he's 22 months now!) he really loves eating unusual colors of foods.

Now I have an 8 week old newborn and am getting really excited to start making baby food again. Our older son just eats what we eat now, so I haven't made baby food for a long time. Going to be fun!!!!!!!

I have never heard of a blue potatoe, where do you find them? I am interested to try them for myself. LOL
