A different variation of Sausage Peppers and Onions (Great over Pasta)

I made this last night and my family loved it!



Ingredients

Sausage Links (I used 9 links of hot and sweet)

Peppers, sliced (I used about 1 1/2 cups of green, red and yellow)

1 Onion, sliced

3 cloves garlic, minced

Olive oil for frying

2 tbs Italian Seasoning

12 oz jar of prepared Bruschetta (Trader Joe's)

1 1/2 cup red wine

salt and pepper, to taste

1# macaroni cooked

grated cheese for pasta



Par boil sausage for 20 minutes. Coat bottom of a sauce pan with olive oil and fry sausage for about 10 minutes. Remove and cut into 3 pcs each. Set aside.



Add peppers, onions and garlic to pan and fry for about 5 - 10 minutes. Add sausage, bruschetta, wine, seasonings and salt and pepper. Simmer for about 30 - 40 minutes.



Serve over pasta, on sub rolls or both. Make a great sauce.
