coconut chicken fingers

You will need:

1 package of boneless chicken breast ( sliced into chicken finger size)
1/2 box of corn flakes
1 pkg of coconut flakes
3 eggs
1 cup of flour
3 to 4 cups of vegetable oil for frying

directions:
You will need 3 seperate bowls for blanching the chicken.
First crush your corn flakes with your fingers. Then combine corn flakes and coconut flakes in one bowl. Then wisk your eggs in another bowl, then put your flour in another bowl.
Next you will start your blanching process.

First dip chicken pieces in the flour mixture, then the egg mixture, and last the cornflake mixture.
When all of your chicken pieces are coated, your ready to put them in hot oil for frying!

These are great served with honey mustard with red peper flakes in it :) yummm
