Spinach Potato Leek Soup

1 lb. leeks (split & chopped into about 3/4" pieces)

4 cloves garlic (pressed)

3 tbsp. butter

1 lb. potatoes (peeled and chopped)

3 c. chicken broth

3/4 lb. spinach leaves

1 tsp. tarragon

2 tbsp. lemon juice

1 tsp. white pepper

1/2 c. half and half

salt to taste



Saute the leeks and garlic in butter. Add potatoes and chicken broth. Boil until potatoes are tender. Add spinach. Stir until spinach is wilted. Add remaining ingredients. Puree soup in blender or food processor. Enjoy!
