Stuffed Roasted Poblano Peppers

Blacken fresh poblano peppers on your gas stovetop. Place the peppers in a paper bag for about 10 minutes. Run peppers under cool water and remove the blackened skin. Cut off the stem of the pepper, remove all seeds (hot!) and stuff w/ cheese, chicken, potato cubes. Put into a casserole dish and top w/ your favorite salsa. Microwave 5 minutes or bake in the oven for 15 minutes until cheese is melted. Top w/ sour cream or guacamole and serve w/ rice and beans.
