Thai Chicken or Shrimp in Peanut Sauce

1 lb of cubed chicken or shrimp

1/3 C Italian Dressing

2 tbsp Vegetable Oil

1 tbsp. Sesame Oil

1 C chopped green onions

2 tbsp chopped cilantro



Marinade meat in dressing for 1/2 hr. Discard dressing, cook meat in oil. When meat is done add remaining ingredients.



Thai Peanut Sauce:

2 tbsp peanut butter

1 tbsp soy sauce

1 tbsp honey

1 tsp grated ginger (found in a tube in the produce section)

1/2 tsp cayenne pepper

2/3 C Italian dressing



Mix ingredients together & serve over meat & rice/noodles.



Tips for this recipe: I don't use green onions since I don't like them & I don't use cilantro since I don't want to pay for a bunch of it when I'm only using 2 tbsp. It's great w/out these ingredients, so don't stress if you don't have them or forget them. I also found that 1/2 tsp of cayenne pepper can be a little on the spicey side, so if you're not into spice I'd only use 1/4 tsp. I like the recipe just the way it is, but my husband said he thought it was a little on the sweet side, so I doubled the soy sauce in the peanut sauce recipe & he loved it. I also found that the sauce works better if you nuke it for a 30 seconds or so. It heats up the peanut butter so it blends a little more. I know this all sounds complicated, but trust me it's super easy & will be sure to be a hit in your family. We love this recipe!
