Warm Homemade Applesauce

For every 4 apples = approx. 2 servings

4 apples (pref. golden delicious, but any combination works)
1 cup water
approx. 2 Tbs. brown sugar (plus or minus to taste)
cinnamon & nutmeg to taste
juice of half a lemon and/or orange
lemon and/or orange zest (optional)

Peel apples, cut into quarters or eighths, put in pot and add the water. Squeeze lemon juice and drop in. Boil water. Once boiling turn down to a simmer. If using zest, add zest while simmering. Simmer until apples are soft (test with a fork) --at least ten minutes. Remove from heat and discard lemon. Mash until desired consistency. Ad brown sugar, cinnamon and nutmeg to taste. Serve hot!!
