I have found that for most things I mix 1T Ground Glax Seed Meal with 1 to 2T warm water, let it sit for a few minutes to thicken and then add it to the mix. I have used this for several different cookies and you couldn't taste the difference.
I don't like EnerG because it tastes very baking soda-y to me (perhaps it was the recipe I was using at the time!).

I also use EnerG egg replacer for baking. The Food Allergy Mama blog (http://www.foodallergymama.com/) has great cookie and cake recipes that are dairy, egg, and nut free.

I use Orgran brand egg replacer! I love it.
when making cookies, muffins pancakes etc.... I just add the dry egg replacer to the mix and adjust the water or butter as needed. I do not mix it with water first.
We have had great results!!!

I also have bougth both cookbooks by Linda Marienhoff Coss called "What is to eat" and "What else is to eat"- got them on Amazon very inexpensively. I have not found a recipe yet that I didn't like- and I have tried probably 12 from each book. Just FYI! :)

The book The Joy of Vegan Baking by Jean Patrick Goudreau, it's an awesome cookbook for no egg, no dairy, recipes. I have been using this for 2 yrs now and many of the recipes are so good no one even knows they're vegan. They also explain how and in what to use all types of substitutes for egg, milk, amounts and all. Excellent book. Worth buying.

One thing I have found really helpful is to use vegan recipes since they don't use eggs (or dairy- both of which my son is allergic to, as well as nuts). You can use whatever margarine/ butter/ oil is safe for your family and they they have found lots of easy ways to make yummy desserts/ biscuits/ breads/ cakes/ cookies/ muffins/... the list goes on. I love vegweb.com the best because the recipes are rated after people try them. They also have tons of recipes. Good luck and happy hunting! :)

1/3 cup of applesauce.Now if you're using a box recipie for a cake, the 1/3 is all you need for the whole cake. I did this for my sons first second and third birthday cake, and no one knew any different. This is how I make all cakes now. I preferr this way. Its more, moist.

box of cake mix and a can of pop/soda...nothing else...or a box of cake mix and a small can of pumpkin...I have a good recipe for chocolate chip cookies I got out of taste of homes healthy cooking mag. they have a special section that sometimes has allergy friendly recipes. I also know a really good book...I don't like EnerG egg replacer

Love EnerG egg replacer. If I'm making banana bread, pumpkin bread - don't need one. The banana and pumpkin act as binders.
You can also try this one from FAAN:
1 1/2 T water + 1 1/2 T oil + 1 tsp. baking powder ----- per egg
