I know I am late to this discussion but there are a couple of dunkin hines cake mixes that only contain wheat. Yellow, & chocolate I think. You could you the egg replacer. Also I learned from weight watchers you could take a cake mix and put in a can of soda. Sprite whatever rather than other ingredients.....

OMG Thank you all so much! I Also thought my son was going to have to have jello for his first birthday!
Brandi If you could post the recipe to the icing when you get a sec that would be awesome!

Thanks so much for asking for a cake like this & for posting the recipe. I've been worrying about what to make for my daughter's 1st birthday since she can't have milk. I thought I was gonna have to do jello, lol. Can't wait to try this cake!

I have used this cake recipe as well - more times than I can count. My latest was to omit the cocoa and I used Amaretto for flavoring - would add more next time, it gave an awesome flavor to the plain cake. I use canned frostings that are dairy/egg free. I have also experimented LOTS with desserts, etc and find alternatives that people are surprised what is "not" in it. My mom has used this recipe and used Koolaid for flavor/color too...the possibilites are endless.

I use the same recipe as the one below. Only I use apple cider vinegar instead of white. Just tastes a little better. I also left the chololate out for my daughter's 1st bday cake, just bc it was pink...WOW! The most moist vanilla cake you have ever put in your mouth! And no one will ever know it's missing ingredients! I've got the icing recipe and will post it....as soon as I find it. There's also My daughter was a llergic to eggs until she was 2 yrs. old. Now she's just allergic to nuts/nut products.

Here is a recipe for "Wacky Cake", it is a delicious very moist chocolate cake.  I frost it with store bought vanilla frosting but you can make your own frosting or glaze for it.

Ingredients:

3 cups flour                                                     2  tablespoon of white vinegar

2 cups sugar                                                   1 teaspoon of vanilla

1/2 tsp salt                                                        10 tablespoons of vegetable oil

6 tablespoons cocoa                                      2 cups of water

2  teaspoon baking soda

Mix flour, sugar, salt, and cocoa in large bowl, with spoon create 2 wells in mixture. Put 1 tsp of baking soda in each deression and add 1 tablespoon of vinegar to each well, let it fizz.

Add remaining ingredients: vainilla, vegetable oil, and  water.  Mix.

Bake at 350 for about 30 minutes or until clean toothpick test!

Good Luck!
