MEAT LOAF



1 lb ground turkey

1cup Italian breadcrumbs

1 onion finely chopped

1 broocolli crown

2 carrots

2 cloves garlic (in garlic press)

1/4 cup ketchup

1 teaspoon salt

1/8 teaspoon pepper

1 egg/ or egg substitute

(optional) 4 slices turkey baccon (cooked)



1.) pre heat oven to 350 degrees, coat 9x5 inch loaf pan with non stick spray



2.) place broccoli and carrots in steamer, steam for 20 min, then put them in a blender to purray.



3.) in a large bowl mix ground turkey with egg, bread crumbs,

then add purrayed broccoli and carrots, onions, pressed garlic



4.) add ketchup, salt and pepper



5.) place in the pan. add additional ketchup to the top of the meatloaf. (as desired)



6..) optional, add cooked turkey slices to the top



7.) cook for 1 hour at 350



TEX MEX CALZONES



1lb ground turkey breast

1/2 cup chopped onion

1/2 cup green bell pepper

1 red bell pepper

3/4 teaspoon ground cumin

1/2 teaspoon chili powder

2 garlic cloves, minced

1 jar salsa verde (I prefer La Victoria brand)

1 can refrigerated thin crust pizza dough

1/2 cup shredded cheese



1.) preheat oven to 425



2.)Heat a large skillet on medium, add turkey, cook for 5 min, add onion and next 5 ingredients, cook until veggies are crisp tender, remove from heat and add the salsa



3.) Unroll the dough and divide it into 4 equal portions. Roll each into a rectangle. Spoon on the ground turkey to each rectangle and sprinkle on a spoon of cheese.



4.) Fold the dough over the turkey mixture and press the three open sides down with a fork.



5.) spary non-stick spray over baking sheet and place the calzones.



6.) Bake at 425 for 10-12 minutes
