Hey Moms of May '08 babies, your babies are almost one! My son turns 1 on Monday and we had a little early celebration tonight since I'm working that day. Anyway, I wanted to make a little cake for him that wasn't loaded with sugar and artificial coloring. I found a recipe for a yummy carrot cake and made it into cupcakes and put whipped cream on top instead of frosting. He LOVED it and scarfed the whole thing! And unlike other babies I've known, he did not have an upset tummy after his first cake. If you'd like the recipe, go to www.myrecipes.com (the website for Cooking Light magazine's recipes) and search for "Carrot Cake with Toasted Coconut Cream Cheese Frosting". It was an easy cake to make and it was so yummy. I bet your little ones will like it as much as mine did!

Thank you so much for the idea!!! I have been thinking about what to make... I found a recipe in the back of the What to Expect the First Year book, but wanted to look at others too. This sounds like a great idea! Thanks :)
