My baby has not had sugar yet and I don't want to give her a ton (or any) on her big day. Thoughts/Suggestions would be great!

why not use banana bread in your cupcakes. the banana makes them sweet.

I think you could google any low sugar cake mix and make them into cupcakes, I know that many traditional cake recipes can split the sugar half and half with splenda without much change.
