I need a recipe that is gluten free, egg free and chocolate free for my daughters 1st birthday. Any suggestions?

I just found a new cookbook called Babycakes, Its a vegan, gluten free and mostly sugar free bakery in NYC and the Vanilla cupcake recipes sounds divine. I made the chocolat brownie bites and they are really good. She even lists a frosting with agave! Let me know if you want it.



Also, Vegan Lunchbox has a fluffy white cupcake that is really good!!!

Carrot and Chocolate Fairy Cakes



75g Rice Flour

75g Potato Flour

50g Cocoa Powder

2 tsps Supercook Wheat free baking powder - White lid)

180g Caster Sugar

6 tablespoons Sunflower oil

200g Grated or preferably pureed carrot



1. Combine ingredients in bowl adding the carrot last. Spoon in to fairy cake or muffin cases.

2. Cook in oven at 200 degrees or 400 F, Gas Mark 6 for about 10 minutes. Leave to cool.



N.B. These can be made without the chocolate by removing the cocoa powder and using 100g of Rice and 100g of Potato flours instead.

You can replace the carrot with banana for a sweeter cake.

I'd only ice the carrot ones though. The banana ones are too sweet otherwise.





Peanut Butter Cookies



125g Pure Sunflower Spread (Not the soya or organic ones)

175g Brown Sugar

125g Smooth Peanut Butter

1tsp Baking Powder

175g Rice Flour

1.5 tsp Ener-G Egg Replacer (details of how to use it are on the back of the packet)



1. Cream together the butter and sugar. Beat in the Peanut Butter.

2. Mix in the baking powder and flour.

3. Add the egg replacer last. Mix 1.5 tsps with two tablespoons of water. Immediately add to the other ingredients.

4. Place teaspoonfuls of the mix with space to expand on oiled baking trays.

5. Bake in a pre heated oven for 15/20 minutes. . Leave to cool before removing from baking tray.





Golden Krispies



2 tablespoons of golden syrup

30g Brown sugar

30-60g Kallo Wholegrain Puffed Rice Cereal



1. Heat sugar and golden syrup in a saucepan until melted

2. Stir in enough Rice Krispies to absorb all the mixture

3. Spoon in to paper cases or baking tray and leave to set in fridge or cool place.



Basic Biscuit Recipe



25g Potato flour

125g Rice flour

90g Pure Sunflower Spread (Not the soya or organic ones)

60g Caster Sugar



1. Cream margarine and sugar

2. Stir in flour and work together until mixture forms a dough ball. Add a little water if needed.

3. Roll out on floured service and cut in to rounds or shapes (make sure to use safe flour)

4.Bake at 180 C or equivalent for 20 minutes

5. Leave to cool before removing from baking tray.
