our daughter is allergic to dairy and soy, i enjoy baking but find few recipes that don't use a 'margarine' at all. we've experimented baking with applesauce, sometimes making the food heavy, is there another way?

Another substitute which can work well is coconut butter or coconut spread Earth Balance makes it. http://www.earthbalancenatural.com/#/pro...

There are other brands as well. It does add coconut flavor, so you would need to pick good combinations.

If you don't know about crazy or wacky cake, google it. There is only oil in it, no dairy either. As a vegan it is one of my favorite cakes.

I've got a vegan blog with lots of recipes. If you are interested, it is growingupveg.blogspot.com

I've had a few friends who have children with allergies use the recipes. If you ever are searching for a particular recipe or substitution, I'm happy to help. Good luck!

When I'm baking I freeze/refrigerate Olive Oil. It will give it a margarine-like consistency and works well whenever I've used it.

There are a lot of good recipes that use canola oil instead of Earth Balance. Take a look at Vegan Cookies Invade your Cookie jar and Vegan Cupcakes Take Over the World for ideas.

earth balance has a vegan/ soy free variety. It isn't sold where I live, but maybe check their website and see where you can find it.

Here in Australia they have a spread called 'Nuttalex' with no soy or dairy that's avaliable in olive oil, kosher, original and low fat. It's just like margerine, but if you're not an aussie, I'm not sure where you can buy it. In desperation you could solidify some olive oil in the fridge for a spread, and it's the holy grail of baking, though look for a light one that will not have that overpowering taste.
