and the girls birthday party isn't for 13 more days.... I don't want to have buy ANOTHER one (I ended up making MY birthday cake 3 weeks early and bought myself another one... which would be the one that is gone now) AGAIN!!

It's a tragedy I tell you. What the heck am I going to DO for 2 weeks...?? ;)

Banana bread, pumpkin bread, and carrot cake are good too. I'm not a HUGE fan of walnuts, but I can handle them. Pumpkin spice cupcakes are definitely good....

I don't mind a really good top notch carrot cake every now and then but it has to have a cream cheese frosting and lots of walnuts.

I only like super moist cake or a really light sponge cake anything in between just isn't worth it for me.
Brownes..... soooo goood.

If you can afford it, use dutch processed cocoa powder (I use a brand named Pernigotti, got via Amazon, but there are loads and you might find some in your grocery store if it's a good one). It makes the WORLD of difference with homebaked chocolate cake.

I can't eat homemade chocolate cake... Well, I CAN, but I don't prefer it. My stepmom made me a cake for my birthday and I let the kids eat all the leftovers while I finished up the devil's food cake from a box mix. I've even become a pickier 'cake snob' since I've found dark chocolate fudge cake mix.



Though I DO have all those ingredients.... I may just have to give it a go soon. :)

cake in a mug...

4 Tbsp. flour
4 Tbsp. sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
Small splash of vanilla
3 Tbsp. chocolate chips, optional

In a microwave safe MUG:
Add dry ingredients to mug, mix well with a fork.
Add egg, mix thoroughly.
Pour in milk and oil and vanilla, mix well.
Add chips, if using.
Put mug in microwave, and cook for three minutes on 1000 watts.
Cake will rise over top of mug--do not be alarmed!
Allow to cool a little; tip onto a plate if desired.

It's not perfect, but it does the job for cravings. Best with vanilla ice cream.

I have both chocolate and m&m cookies.... I might die without them in the house. They make me happy....wow I feel lame.
