How do I get dried milk out of carpet?

I'm having basically the same issue. My son had a chocolate shake at the table and down it went. And now we're trying to figure out to how to get that dry, crusty feeling out of the carpet after several cleanings, which I believe is from the milk. I've noticed a few people have tried vinegar, but I know that can change the color of the carpet, so test a spot first. A few others websites I found in a recent search are below (note the comment about NOT mixing bleach and ammonia...I'm also not sure about mixing ammonia or bleach with the items listed in the second link):
