I have 2 kids under 2 and they love this really enexpensive and easy recipe......1lb ground hamburger(cooked n drained), 1 can tomatoes,1 can beans,1can tomatoe sauce, alittle chili n garlic powder. Mix all this together and let simmer n 15-20 mins you have Chunky Chili as I call it!

another one is chicken quesadillas:
Canned chicken (shredded or chunk)
Flour tortillas
butter
shredded chz
quesidilla sauce
1 pk taco seasoning
cut up chicken with fork til shredded and heat on med with 1/2 cup water add seasoning
butter 1 side of tortilla and heat in frying pan add chicken and chz to one side and fold flip

Chicken Lo Mein:
CHicken flavored Ramen noodles
Soy Sauce
Pre cooked chicken strips in the box (perdue)
Bag of frozen mixed veggies
Garlic salt
Cook noodles without seasoning
Cook veggies add together
Add 2 tsp soy sauce and a pinch of garlic salt along with ramen seasoning
Doesn't get any easier and quicker!

I love bbq chicken it is super easy and very good!
any chicken you like boneless or bone in
your fav bbq sauce
garlic powder, salt, pepper
i bake it so you will need a dish that is big enough for the chicken and that is good for the oven.
lay the foil down put in the chicken
season it with the garlic, salt and pepper to taste
pour as much bbq sauce you want then flip them over
season other side then flip back over so both sides are bbqed then bake at 375 till they are done!!!
i love this recipe and with foil its a VERY easy clean up!
then any easy sides you like!!! hope this helped

enchilad casseole
1lb browned hamburger drained
1 can 10 3/4 os cream mushroom or celery
1 can rotel original
1 small green pepper and 1 small onion choppd finely
1/2 cup sour cream add can of rotel
brown meat season w salt and pepper drain
1 pkg flour tortillas torn into pieces
saute onio and green pepper till onions are transparent
add this to meat and then add to soup mixture
mix meat soup and rotel and sour cream all together. spray 11x13 pan w pam spray place torn tortillas in botto of pan alternate layers of soup mix shredded cheese and torillas end with layer of chees cover w aluminum foil sprayed so it won't stick to cheese bk 40-50 minutes untilhot in middele

6-8 chicken thighs
1 can cream of chicken soup diluted
1 can cream of broccoli soup diluted
Bake in the oven 350 degrees 1 1\2 hours.
I make this with mashed potatoes and a veggies
If you want it real simple make just rice or brown buttered noodles.

tater tot casserole. It is super easy and my family loves it. There are many recipes for it depending on taste, but you can find it on the web and it is not that expensive to make. Especially if you use store brands.

This one probobly isn't real healthy, but it is oooohhhh sooo good! Slice some hot dogs the long way almost all the way through, fill the crack with mashed potatoes, then sprinkle that with shredded cheese. Partially cook some strips of bacon and wrap a piece around each of the hot dogs (with the mashed tators and cheese) then pop them in the oven til the bacon is done and they are hot all the way through! I think I set the oven at like 350.

Breakfast Burritos
Wrap any or all in a whole-wheat tortilla. Here's what we put in ours.
Scrambled egg
diced Jimmy Dean pre-cooked sausage
diced bell pepper and/or onion
Spinach
cheese
jalapenos
Once it's all wrapped, microwave for about 30 seconds per burrito. Eat plain, with salsa, sour cream, etc. Yummy!!

I have one that my 2 1/2 yr old and husband loves... Mac & cheese tacos
1 to 1.5 lb ground beef
2 boxes of mac & cheese
1 pk of taco seasoning
Cook the meat, add seasoning like you would making tacos.. After Mac & cheese is done pour into baking dish, add meat and stir real nice and good! bake at 350 for about 15 minutes. I will also put a few slices of fresh tomatoes and shredded cheese on top with at little salt and pepper
All this stuff I usually already have at home, if I don't have tomatoes I just don't add them.

Put a roast in the crockpot with one packet ranch seasoning, 1 packet brown gravy mix and 1 packet Italian dressing mix plus 3/4 cup water. Cook on low for 7-8 hours or high for 4-5. Sometimes I add potatoes also. Sounds like an odd mixture but its awesome. Also, sometimes a full packet of ranch is too salty so I'll only do half.

Place about 1-2 lbs of beef tips in this gravy mix:
1 can Cream of Mushroom gravy, 1 packet brown gravy mix, 1 soup can worth of water
Cover in foil before putting in oven. Cook at 325. Time depends on how much beef you used. 1 lb of beef tips usually takes about 60 minutes. You will know they are done when the beef practically falls apart when cut.
Deliciious over biscuits, but healthier served with veggies or a salad!
I have never tried this recipe in a crock pot, but I assume it would work just as well, though it would have to simmer all day.

The crockpot is a great go to for busy nights. A few things I enjoy making are:
Beef stew:
1 pack of the inexpensive "stew" beef (usually only $2-$4 a pack)
3 stalks of celery, chopped
4 Carrots, chopped
1 onion
15oz can of stewed or diced tomatoes
1 1/2 cups of beef broth
1 tsp thyme
1 tsp oregano
1 Bay leaf (remove when finished cooking)
dash of salt
Put everything into the crockpot and set on low for 7-9 hours. *Some variations I made to this is to add a 1/4 cup of Merlot. The alcohol cooks out but it leaves it with a really nice flavor. You can also add some diced potatoes and substitute a beef bouillon cube with a 1 1/2 cups of water instead of the broth.*
Potato-Leek Soup
4 cups of peeled, diced potatoes
3-4 thinly sliced leeks (make sure to wash them well because they usually have a lot of sand in them)
1 bunch of green onions, ends trimmed off and chopped
2 cups of chicken broth
4-6 slices of cooked and crumbled bacon
1 cup of evaporated milk (I've use regular)
1/2-1 cup of shredded cheese (optional)
salt and pepper to taste
Combine first 5 ingredients and cook on low for 8-10 hours. Add milk and cheese in the last half hour, if using. Adjust seasonings. Mash with a potato masher to thicken or can be pureed for a smooth consistency. Add additional broth or milk if necessary. I like to reserve some bacon, green onion and cheese to top each bowl with...very good!
Something else I like to make in the crockpot is poached chicken. I've done this with 3-4 chicken breasts and then you can use the prepared chicken in different recipes. just put the chicken in the crockpot (even frozen), pour enough chicken broth or water over the top to just cover them and let them go on low for about 6-8 hours (not much longer or all the liquid may evaporate). Remove and shread with forks. First meal, I made enchiladas. Used a few days later for a chicken pot pie and then used the rest the following day in a burrito for my husband for lunch.

Here are a few short simple recipes that take little to no time:
Stuffed Peppers (only cheep in bell pepper season)
- cook 1 lb ground beef or turkey and add 2 cups min. rice. Cut tops off peppers (6 is good) and clean out, set in large pot and stuff with ground beef rice mix. Then pour 2 cans of tomato juice into peppers and around peppers. Cook for 1/2 hour. I like to experiment seasoning meat, but use anything you like, salt and pepper is a good place to start.
Spegetti and meatballs
cook noodles, add store bought sauce serve with some bread and EVVO and parmesan and a salad or veggies. Done.
