One of my favorite meals ideas

I take a whole chicken which is like 7dollars the most. Throw it in the crock pot stuffed w/ chopped onion and celery top it with baby carrots and cook it. We then have a chicken dinner. The second day I usually toast some italian bread top it with chicken and gravy w/ a side and then take the rest of the chicken and make chicken noodle soup by just adding rotini noodles boiled w/ chicken boulian cubes undrained. It makes two full meals plus lunch or another meal or a snack for under 10 bucks really

You are absolutely right! I was just saying how important it is to learn to transition leftovers into another meal and you can do that with pretty much anything -- leftover rice either make rice pudding or add veggies & make stir-fry (all the ingredients most people have in the house already), steaks or pork chops -- chop them up and make sandwiches or tacos (again add bread or tortillas -- inexpensive to buy) with some cheese & veggies. baked potato (i prefer to use smaller ones) -- u can make smashed potatoes cooked in chicken broth the next day or chop them up & give them a quick pan-sear w/ olive oil & rosemary. my favorite one is buckwheat (my family loves buckwheat as a nice alternative to rice/risotto & potatoes), so the next day i take the leftover buckwheat add flower, milk, salt, sugar & a bit of yeast & make buckwheat blinis -- they are great salty or sweet and are a nice spin on pancakes.
